Easy DIY Pickle Juice Recipe

Ingredients: 1 cup water 1/2 cup white vinegar or apple cider vinegar 1 tablespoon kosher salt or sea salt 1 teaspoon sugar (optional) 1/2 teaspoon whole black peppercorns 1/2 teaspoon dill seeds or 1 teaspoon fresh dill, chopped 1/2 teaspoon mustard seeds (optional) 1 clove garlic, crushed (optional) 1/4 teaspoon red pepper flakes (optional, for a spicy kick) 1/4 teaspoon coriander seeds (optional) 1-2 cucumbers, thinly sliced or cut into spears


NOTE: You can substitute raw honey in lieu of sugar - it will change the flavor a bit but your gut won't complain.

Instructions: In a small saucepan, combine water, vinegar, salt, and sugar (if using). Heat over medium heat, stirring occasionally, until salt and sugar dissolve. Remove from heat and let cool.

In a clean jar, add peppercorns, dill seeds or fresh dill, mustard seeds (if using), crushed garlic (if using), red pepper flakes (if using), and coriander seeds (if using).

Add cucumber slices or spears to the jar, packing them tightly. Pour cooled vinegar mixture over cucumbers, ensuring they are fully submerged. If necessary, add more water to cover cucumbers completely.

Close the jar with a tight-fitting lid and refrigerate for at least 24 hours to allow flavors to meld.

After 24 hours, your DIY pickle juice is ready to use. Enjoy in moderation due to its high sodium content.
