Grilled Artichokes with Lemon-Garlic Aioli
Ingredients:
4 medium artichokes
1 lemon, halved
1/4 cup olive oil
Salt and pepper, to taste
Lemon-Garlic Aioli:
1/2 cup mayonnaise (or Greek yogurt for a healthier option)
2 garlic cloves, minced
1 tbsp lemon juice
1 tsp lemon zest
Salt and pepper, to taste
Instructions:
Prepare artichokes by trimming stems, removing outer leaves, and snipping off sharp leaf tips. Cut each artichoke in half vertically and use a spoon to remove the fuzzy choke.
Bring a large pot of water to a boil. Squeeze the juice of half a lemon into the water, and add the lemon halves as well. Boil the artichoke halves for 15-20 minutes or until slightly tender. Drain and set aside.
Preheat your grill to medium heat. Brush the artichoke halves with olive oil, and season with salt and pepper.
Grill the artichokes cut-side down for 5-7 minutes, then flip and cook for another 5 minutes, or until tender and charred.
Meanwhile, prepare the lemon-garlic aioli by mixing together mayonnaise (or Greek yogurt), minced garlic, lemon juice, and lemon zest in a small bowl. Season with salt and pepper to taste.
Remove the artichokes from the grill and serve warm with the lemon-garlic aioli on the side for dipping. Enjoy your gut-healthy grilled artichokes!
