Tacos have come a long way since then, and now you can enjoy this gut-healthy version on your Taco Tuesday!
Today, we're sharing a gut-healthy taco recipe that'll make your taste buds dance and your gut thank you!
Probiotic Veggie Tacos! 💃🕺
Ingredients:
1 cup shredded red cabbage
1 cup chopped kale
1 avocado, sliced
1/2 cup chopped red bell pepper
1/2 cup shredded carrots
1/2 cup chopped cilantro
1/2 cup fermented salsa (store-bought or homemade)
1 cup tempeh, crumbled and cooked
1 tbsp coconut oil
1 tsp cumin
1 tsp paprika
1/2 tsp garlic powder
Salt and pepper, to taste
8 small whole-grain or corn tortillas
Instructions:
In a skillet, heat coconut oil over medium heat. Add crumbled tempeh, cumin, paprika, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until tempeh is browned and crispy.
Warm the tortillas in a separate skillet or in the microwave for 20-30 seconds. Assemble tacos by layering the warm tortillas with tempeh, red cabbage, kale, avocado, red bell pepper, shredded carrots, and cilantro.
Top with a generous spoonful of fermented salsa for an extra probiotic punch!
